Menu: 4-2-2012 to 4-8-2012

It’s late, again… I keep forgetting to post it. Plus I wanted to include the recipe this week.
This week’s menu includes some things from last weeks—we ended up eating leftovers one night and had an unexpected eat out night last week too! (not happy about that part) Eating out is what I’m trying to avoid. This week I want to Eat at home Everyday… that is my goal.
Monday: Beef Tips and Rice w/ asparagus and tossed salad  Chicken Fried venison nuggets, Mashed potatoes, corn.
Tuesday: Sandwich Night
Wednesday: Individual Meat Loaves and Macaroni and Cheese -*meat loaf prepared with venison w/ added pork sausage
Thursday: Meat Loaf Sandwiches
Friday: Skillet Scalloped potatoes and Hot links
Saturday: Mexican Casserole  ** RECIPE INCLUDED
Sunday: Potato Salad Taking to the kids house for Easter Gathering and Cook Out.

Mexican Casserole --
1 lb of ground meat (I used lean venison)
1/2 cup each chopped onion and bell pepper
1 can of corn,drained
1 can of chili beans or black beans drained (whatever is on hand)
1 can of diced tomatoes and chilis
1 can of cream of mushroom soup
** and a portion of milk (equal to soup can)
10-15 corn tortillas (torn into quarters)
Monterey Jack w/ or w/o jalapeno (preference, I like lots of cheese)
salt and pepper to taste
in a skillet brown ground meat w/ onion, bell pepper, salt and pepper. After it’s browned (drain your meat, with venison there is no fat)  you may then stir in tomatoes and corn and return to skillet let simmer until ready to add to casserole.   In a bowl mix soup and milk , whisk thoroughly. Begin layering meat mixture, beans, cheese ,tortillas and pour some of the milk mixture. Repeat layers until its all in the casserole.  Heat in the oven until bubbly,at the end,  you may add more cheese on top if you like. Remove from oven let cool, serve with a Salad.

If you use diced chicken—you can use cream of mushroom or cream of chicken or both. Taste wonderful.

sounds jummy jummy friend..love your blog is such a variety in it...you are very creative..waiting the month of may to start doing some nice ajustments home..then i have vacation of work 2 weeks..the front and back yard will be done...thanks for sharing..blessings

Meatloaf sandwiches are the reason I make meatloaf! Love them! Now does your husband hunt and that's where the venison comes from? I've had it a few times, sometimes it's been good, other times I haven't cared for the taste - blame the preparer - me! Your recipe sounds delicious and easy. Happy Easter to all your family. Ann
