:: Easy Weekends ::

 

I like easy weekends.  To me easy weekends are those that don’t involve a lot of coming and going. I like weekends when we get to be at home—no place to go, we can DO NOTHING, or Do Anything!

It helps that the weather co-operated. It warmed up today in the low 80’s at one point. It was over cast all day— breezy in the early hours with the winds dying down later in the day.

This is just a laundry list of some of the things we did on Saturday:

-Trimmed trees

-Burned some brush… I played fetch with Buster until the Chi-weenie came over to play with him (Patty this is for you)

-“Buster” and “Fat Cocoa”  (the chi-weenie)  dogs playing in the yard

-Did the laundry and hung it out! ( 82° and breezy) 

-Raked some grass from the last mowing and filled the laying boxes and coop with new hay.

-Cleaned off the porch and tossed a lot of the random bits that accumulate there. (Does that happen on your porch?…random bits?)  It is like they are in limbo—you don’t want to take it in the house…but it doesn’t belong in the yard… so it just hangs out on the porch!

-I found an envelope of Spinach Seeds…and planted them in one of the boxes. We may get some spinach out of it—before it gets too cold.  I put it in one of the boxes that is equipped with cold frames.

-I found a garlic bulb and it was sprouting. (random bits) So I planted it out near the car park on either side of the gate, who knows we may get some Elephant Garlic out there!

-I also planted another Avocado pit that I had rooting in the window.  You may remember I started some back in the summer of 2011—and when Honey went in the hospital, they didn’t get watered. DIED.  :/  so…now I’m starting over. So far I’ve rooted one!  yay!

-I crocheted and finished up my frame—I’ll show that to you tomorrow… here is a picture of it before frogging (I wasn’t liking the lacey parts) TOO FLOPPY :/

-Then we had an EASY WEEKEND MEAL:

Pork Chop Fajitas-

INGREDIENTS:

  • BONELESS Pork Chops
  • Tortillas
  • your choice of veggies
  • 1 Tablespoon of Olive oil
  • Garlic powder (a pinch on each chop)
  • Cayenne powder(optional)

I sauted  bell pepper, onion, and corn with a little bit oil

After sauteing the bell pepper and onion I tossed the 4 boneless pork chops into the pan and browned them (cooking through but still juicy)

Tossed in about a cup of frozen corn and browned it at the last

Sliced up a tomato

Sliced an Avocado squeezed lemon and a pinch of salt on the avocado

After slicing the pork chop into thin slices… 1 pork chop makes 2 wraps.

Piled it up on the warm tortillas-  I like to add jalapeno too.  :)  

Fold and eat! 

YUMMIE!  We both love this!  It’s easy on a easy weekend or a Very Busy Weeknight!!!

It is also EASY ON THE GROCERY BUDGET. I cooked 4 pork chops but we only ate 1 each. I buy pork loin roasts when they are on sale $1.99 (which isn’t very often anymore)  I bring them home and Honey slices them and packages them up into small meals.  It is WHITE meat—and versatile. It can be substituted for chicken in a lot of recipes. 

I hope it’s warmed up where you live. I knew it would here. It always does. We probably won’t have extreme cold until January and February…Maybe as early as December. By extreme—I mean ICE.  WE don’t get much snow…the soft stuff.

easy around here, hung out with friends yesterday, because I couldn't work on project outdoors. I love easy weekends, because I get some down-time from the computer/blog.
Buster has grown soooo much! what a cute picture of those two. :)

yeah... I have some stuff on the porch too... almost grabbed it up yesterday and dealt with it, but everything's all dirty... and I didn't want to hose it off. Maybe today I'll set it out and let the downpouring rain wash it off. :)

Easy? My goodness, it sounds like you all worked pretty hard to me! LOL! I do understand though. It feels good to get certain chores taken care of especially when you can work at your own pace.
Thanks for sharing your recipe. I make something very similar to this, but I use leftover pork chops and thinly slice them.
