:: Small Changes

I’ve been doing this for almost 2 months now. Living with T2 Diabetes..


Changing what I eat. Really it has been pretty easy.  We had already started eating differently after T.H. had that heart attack and stroke in 2011.  Those changes I think were keys to my Cholesterol being lower and my good cholesterol being better!  I no longer fry foods in pans full of vegetable oil.  If I need a little bit of oil for cooking it’s been Olive Oil.  Though last month I bought some Coconut Oil and have been using that instead. It has a very pleasant taste to it, too!



I have discovered Coconut oil is great for so many different things.   Now that I’m no longer using sugar in my coffee, and only Half and Half; I use a little bit of coconut oil to my cup.  I enjoy that coco~nutty taste it gives.  It’s different!

I’ve also used it on my skin, rub it on my feet after my shower and on my face for —dry lines and crows feet around my eyes. I’ve also found that  I use it as drops in my eye…It is very soothing at night.

I recently found a recipe for DRUNKEN PORK CHOPS…  Mmmm… it was so good. I made it the way she suggested and used the beer I had on hand (for the Hog trap) for this recipe.  Her serving suggestion is with potatoes.  I can NOT eat potatoes.  My blood sugar goes crazy high when I do. 

How about that I’m learning to listen to my body.

I used cooked Cauliflower mashed it with a little bit of butter, salt and pepper to taste… oh my!  It was so good!  I’ve made this with chops and also in the crock pot with a pork loin roast…for pulled pork tacos, etc. So delicious I can’t say it enough.

Another recipe I’ve come across that uses Cauliflower is  Pizza.  It’s Cauliflower crust—instead of dough. I’ve not tried it…but can’t wait! The other thing I’m doing?  I’m drinking Kombucha Tea- I’ve read different takes on this tea.  Some say—no change. No health benefits. So say it’s an Oh so wonderful drink for you to drink. It is full of probiotics.  For me… it just sounds good for me.

It doesn’t have ill effects on me. Even though it has sugar in it; my blood sugar DOES NOT INCREASE when I drink it. The sugar is eaten up by the SCOBY (symbiotic cultures of bacteria and yeast)

Plus… look at these great bottles!  Don’t they just look cute on my kitchen counter?   Three bucks each!

Do I think any of this helps or even matters to my health?  YES!  I do.  I can see small differences over all in my energy level. My thoughts seem to be much clearer now.  I’m coming out of that SUGAR FOG.  The true test for me will be in the activity level…over the winter months.  I’m going to have to make big changes there for sure. We can talk about all that next time.


I’m not a doctor and I don’t even play one on TV.  So do your own research before trying any of these ideas at home.  One thing I’ve learned when it comes to being a diabetic.  It is the one disease that you, the patient, are in approximately 95% control of your own health.  It’s not that way with other diseases.

Thanks for all the good information Pat.I have been using coconut oil for awhile. I put in my oatmeal instead of butter. I even fried eggs in it one time. Hope it is helping me, but maybe not taking the regular daily dose as I should.
Just need to try to stay healthy ... getting old in not easy.

We like coconut oil in our coffee too. We first got it for the dog and then found out how useful it is. I also use sesame oil a lot. Changing your diet like you have can make a huge difference. More people need to wake up and make changes like you did!

Tastes like wine? I'm in! I know that when I eliminate most of the sugar from my diet, I feel much better. And as you said, it's not that difficult to do. I will definitely try that tea. Wish I had those bottles! They are lovely. So glad it is going well for you. You are doing a great job adjusting your diet and I'm glad you are actually feeling the difference. Ann
