:: The Yield-- Roasted Chicken ::

We Did it! 
We raised meat chickens. 
We recently filled the freezer with chickens we raised ourselves. 



...And tonight we ate roasted chicken for dinner! 

This is one of the smaller birds. It's just The Honey and myself...so a smaller chicken was perfect for just the two of us. 

I don't really have a recipe that I followed, though I had read several online today. 

Basically, I Stuffed it with onion, garlic and bell pepper;
rubbed it down with Olive Oil and Rosemary.
Tied the legs and wings up with cotton string. Added 1 qt. of water to the pan, threw 2 large potatoes and 1 lb of baby carrots; along with the rest of the onion and bell pepper and garlic. 
And sprinkled the whole pot with salt and pepper!  
Roasted it in a 350° oven for about 1 hour...

The only thing I'd do different would be when I took it out to check on it...I'd have basted it. I forgot. But overall I'd say---------

It was soooo YUMMIE!

It does sound very tasty - but did you have to do the yucky part yourself? I remember my mom talking about her mother doing it when she was a child. If you did, I am impressed. I would not know what to do - you never cease to amaze me.

Congratulations! My grandmother raisd chickens the old fashioned way. I remember the process. SO I have to say congratulations some more! :0) Looks delicious. Well done!

Wow, does that look good! So who did it? You know... who did IT to the chickens? Was it you? Did you hire a hit man? The only thing I think of for meat chickens is how long you raise them and then they are gone in one meal (unless there are leftovers. Ha! ) I haven't cooked a whole chicken in forever. I should give it a go sometime. Thanks for sharing your savory secrets!
